bacon chive cheese dip

I thought that after all the Valentine's sweets,
we could use something savory.
And cheesy. And garlicky. And... bacon-y.

Enter, the bacon chive cheese dip.



I made this dip for our Superbowl party a few weeks ago.
It's delightful hot or cold.
It can be eaten with tortilla chips.
It can be eaten on a bagel.
It can be eaten with pretzels or pita chips.
It can be eaten with a spoon crackers.


This easy to assemble dip packs a lot of flavor...

8oz softened cream cheese
6 to 8oz shredded cheddar
4 slices of bacon, cooked and cooled
1 to 2 cloves of garlic
1/3 cup chopped chives
salt and pepper to taste


Start by mixing your cheeses.


Then add in your bacon [yum] and garlic [yum]
and chives and salt and pepper [also all yum].


I split my batch in two, and filled these tiny casseroles.

Because they are adorable. And Le Creuset.


Refrigerate for an hour or two to let the flavors combine. 
If you want to serve it cold, just dig right in.


If you want to serve it warm [and I think you do]
just pop in the microwave and stir every 30 seconds
until it's melty and your party guests descend on you
like a pack of cracker-wielding animals who don't
let you take a better picture than the below.


But seriously. See all those bits of goodness in there?
Just waiting for you to scoop them up with your finger chip?
Bacon. Chive. Cheese. Garlic. YUM.

  1. Your casserole dishes are so pretty, I love the green! That dip looks so gooey and good (cue the drooling on the keyboard), I would eat it with a spoon too. Who needs crackers?! :D

  7. I made this dip yesterday and did everything like u said.. but it didnt look like that at allt :( It was sooo good ! but it just looked a bit like melted cheese, not cheese sauce! is there anything i could have done wrong? :)
