I know that sounds like a mouthful, but I was cleaning out the cupboard
and decided to mix some extras in to make the cookies more delicious and healthy!
Oatmeal = Fiber
Cherries and Dark Chocolate = Antioxidants
Walnuts = Omega-3s
So, healthy! [Right?]
The dough for this recipe can get pretty thick, so a mixer is recommended.
Start by creaming your butter and sugar, then add in the rest of the wet ingredients.
2 sticks (1 cup) softened butter
1 1/2 cup packed brown sugar
2 tsp vanilla extract
2 eggs
Combine your dry ingredients first, then slowly add to the bowl.
1 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
5 cups oats
And then add in your extras! I went with:
1 cup semi-sweet chocolate chips
1/2 cup dried cherries, roughly chopped
1 cup walnuts
Yum, those cookies look chock full of goodies. Definitely a great combo for an oatmeal cookie. I have a sweet treat linky party going on at my blog and I'd like to invite you to stop by and link your cookies up. http://sweet-as-sugar-cookies.blogspot.com/2011/03/sweets-for-saturday-8.html
ReplyDeleteI love dried cherries! And I bet I would LOVE these cookies. Are they more chewy or crunchy?
