mint chocolate chip cookies

This week's recipe is a simple variation on my chocolate chip cookie post. 
I love mint and chocolate together, so this seemed like a no-brainer. 
And of course, I had to add some green food coloring for St Patrick's Day! 
They might look a little funny, but they taste great!



Makes 36- 48 cookies:
2 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
2 sticks (1 cup) softened butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 1/2 tsp peppermint extract
2 eggs
1 1/2 cups semi-sweet chocolate chips
green food coloring (if desired)

[After some consideration, I've edited the recipe to remove the vanilla extract.
The extra liquid made my cookies turn out a little flat. Still yummy, but not as fluffy as the originals.]


Follow directions from this post, omitting the nutmeg and vanilla extract, and adding the mint extract 
(and food coloring if you like) instead with the eggs.

  1. Nice apron, I bet whoever bought you that has great taste!Its not weird with the food dye! I heard this morning on the news, that they dyed the White House fountain water with vegetable oil! Your green turned out much prettier! :)
