make your own: fresh salsa

Husband and I cook Mexican food... a lot. Usually once or twice [or three times] a week.
His enchiladas are to die for, and I make a pretty mean layer dip.
We do burritos, tostadas, nachos, tacos, you name it. But the easiest recipe we have?


Fresh Salsa.


3 ripe tomatoes, diced into 1/4" cubes
1/2 white onion, diced into 1/4" cubes
1 small jalapeno pepper finely diced
juice of 1/2 lime
fresh cilantro, chopped
salt and pepper
 
Mix tomato and onion in a medium bowl. Add diced peppers and cilantro to taste.
Top with salt, pepper, lime juice, and stir. Let sit for an hour or so, all the flavors will combine.
Serve with tortilla chips or on top of your favorite Mexican Cuisine.
