oatmeal cookies with walnuts, cherries, and chocolate chips

I know that sounds like a mouthful,  but I was cleaning out the cupboard 
and decided to mix some extras in to make the cookies more delicious and healthy!
Oatmeal = Fiber
Cherries and Dark Chocolate = Antioxidants
Walnuts = Omega-3s

So, healthy! [Right?]




The dough for this recipe can get pretty thick, so a mixer is recommended.
Start by creaming your butter and sugar, then add in the rest of the wet ingredients.
2 sticks (1 cup) softened butter
1 1/2 cup packed brown sugar
2 tsp vanilla extract
2 eggs

 Combine your dry ingredients first, then slowly add to the bowl.
1 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
5 cups oats


And then add in your extras! I went with:
1 cup semi-sweet chocolate chips
1/2 cup dried cherries, roughly chopped
1 cup walnuts


Bake for 10-12 minutes at 350, on an ungreased cookie sheet.
Recipe as above yields about 50 medium sized cookies.

 I like to make them on the medium/small side.
So, you know, I can eat more of them... since they're healthy.
