College football season has officially begun! For those of you who don't know,
I cheer for the Michigan State Spartans. I graduated from MSU a few years ago.
I met my Husband there. My Grandfather both attended graduate school and taught there.
And many many of my Aunts, Uncles, and Cousins from both sides of my family
attended as well. [including my brother who is a sophomore there this year- Hi Eric!]
One game day tradition I have when hosting a tailgate is to make mexican layer dip.
And I've discovered a fun way to make it even more football appropriate.
By turning it into a football field!
Assembling this dip is ridiculously easy. Here's what you need:
1 16oz can refried beans (black or pinto)
12-16oz creamy guacamole
12-16oz creamy guacamole
6oz grated cheddar cheese
1/3 cup chopped green onions
1 16oz jar of your favorite salsa
1 16oz container sour cream
1 tablespoon taco sauce
cumin, paprika, garlic powder to taste
[or pre-made taco seasoning]
Start with the beans as your base layer, spreading with the back of a spoon. I used a big
rectangular tupperware container so I could snap a lid on for storing in the fridge.
Layer on the cheese and onions. Normally I would put these two on last, but today
we want the green guacamole field is going to be on top.
Salsa comes next. I would recommend a chunky salsa vs one that's watery.
Mix 3/4 of the sour cream with the taco sauce and seasonings and spread on.
Save the rest for decorating your "field" later.
Then comes the guacamole.
Let's just stop for a moment to appreciate all the beautiful layers here:
YUM.
Spoon the leftover sour cream into a plastic baggie.
Snip off a corner and pipe some lines on your field.
Serve with tortilla chips and let your guests dig in for a touchdown!

ReplyDeleteI was just flipping through blogs and stumbled across this and was thinking I want to make this for the next tailgate against Florida Atlantic... And when I pulled up the page I smiled seeing it was by a fellow Spartan. I graduated last May :)

ReplyDeleteToday is the best day ever: SEC Championship Game. GO DAWGS SIC 'EM!! I found your recipe for the Mexican Layer Dip and was really impressed with how pretty and contained everything was -- this dip normally looks so messy. Can't wait until 4pm to dig into it!!
