pumpkin chocolate chip muffins

It's just about the perfect time of year for pumpkin baked goods, don't you think?

These muffins couldn't be easier. Just mix up the ingredients all in one bowl,
spoon into a greased muffin pan, and bake at 350F for 20 minutes.

Seriously.

Here's what you need:

1 box of cake mix
1 can of pumpkin
3 whole eggs
3/4 cup chocolate chips
2 teaspoons vanilla
1 teaspoon pumpkin pie spice
pinch of salt

And this is what you get.
[Or at least when the chocolate is still kinda melty and you add butter.]

Which brings me to my next point: butter.
Did you know they make cinnamon sugar butter?
And that it tastes amazing on these muffins? [And probably everything else]

Yes. Cinnamon. Sugar. Butter. On your muffins. Do it.

[Also, this recipe works great with a box of gluten-free cake mix!]

  1. I have a pumpkin fest party to go to this weekend, I'll have to try this recipe! Hope they have cinnamon butter in IL! Yum!

  2. These are great! The second time I made some improvements to the recipe (in my humble opinion): I added a little more pumpkin pie spice about 1/8 tsp) and added 1/4 cup more chocolate chips. The extra chips seemed to help them not be so dry. Extra spice is well spicier! Also I found they baked in sixteen mInutes not twenty. I used a yellow cake mix and the package directions were to bake for 15-20 minutes.

Btw, shame on you for recommending cinnamon sugar butter! My hips may never be the same again! ;)
